May is Mediterranean Diet Month, highlighting the health benefits of the Mediterranean diet.
This diet, rich in fruits, vegetables, whole grains, and healthy fats, helps reduce the risk of heart disease, diabetes, and certain cancers. It emphasizes fresh, seasonal ingredients and traditional cooking methods. The goal is to raise awareness and inspire people to adopt Mediterranean-style meals. Embracing this diet can lead to better overall health and well-being.
INGREDIENTS:
2 heads of romaine lettuce, chopped 1 pint of grape tomatoes, quartered 1 cup of cucumbers, chopped 15 ounce can of chickpeas, drained and rinsed 1/4 cup red onions, finely chopped 1/4 cup pitted Kalamata olives 1/4 cup crumbled feta cheese 1 Tbsp parsley, chopped
FOR THE DRESSING: 1/4 cup olive oil 3 Tbsp lemon juice 1 garlic clove, pressed 1/4 tsp of oregano, salt, and black pepper Assemble salad in a large bowl by placing the chopped lettuce first, then add the remaining ingredients on top of chopped lettuce. Whisk the dressing ingredients in a small bowl and pour on top of salad when ready to serve. Garnish with parsley and enjoy!
